Guide · choosing your flour

High-protein flour: start with your recipe

Looking for more protein in your rotis? Choose a flour made for rotis and chapatis, then compare the Nutrition Facts on the same serving basis. “High-protein flour” can also mean bread flour chosen for its dough strength. Those two uses call for different bags.

What is high-protein flour?

The phrase needs context. In bread baking, protein content helps explain how flour behaves in dough. For example, King Arthur lists its bread flour at 12.7% protein and all-purpose flour at 11.7%; its bread-flour guide connects the higher protein to gluten development and structure. These percentages describe those specific flours, not every brand.

Atta Boys is a different kind of blend: whole wheat flour with soy protein isolate, wheat gluten and salt, made for rotis, chapatis and parathas. Its label lists about 14g protein per ¼ cup (34g) serving. It contains wheat and soy, and may contain milk and sesame.

The practical distinction is the recipe you want to make. A bread-flour protein percentage alone does not tell you whether that flour will make the roti you want. Likewise, extra protein in an atta blend does not establish that it works as a one-for-one replacement in bread or cake recipes.

Roti flour or bread flour: which do you need?

Atta Boys has not published testing for yeast bread, pizza or cakes. Our product is intended for rotis, chapatis, wraps and parathas. For those meals, add water gradually: soy protein isolate and wheat gluten absorb water differently from plain atta.

Compare protein on the same basis

A big serving can make a modest-protein flour look stronger than a small serving of another flour. Start with grams of dry flour. To convert a label to protein per 100g, divide the protein grams by the serving weight in grams and multiply by 100. Allow for label rounding when comparing results.

The USDA figure is a reference, not a test of every atta brand. Our Nutrition Facts come from a database analysis of our recipe's ingredients, not a laboratory assay of the finished flour. A roti made with 34g of Atta Boys flour contains about 14g protein from that flour; larger or smaller rotis change the amount. See the protein-per-roti calculation for other portions.

Protein is only one part of the label. Our atta comparison also covers calories, fibre, sodium and ingredients on the same basis.

Before you choose a bag

  • Read the full ingredients. Atta Boys includes whole wheat flour, soy protein isolate, wheat gluten and salt. It is a blend, not plain whole-wheat flour.
  • Check allergens. Our blend contains wheat and soy; it may contain milk and sesame. It is not gluten-free.
  • Match the portion to your cooking. Weigh the dry flour in your batch and divide by the number of rotis for a useful serving estimate.
  • Check delivery and total cost. Atta Boys is milled to order in Austin, Texas for US orders. Allow 3–5 business days before dispatch, then an estimated 2–5 business days in transit.
