A high-protein roti flour, explained
Atta Boys is whole wheat atta rebuilt for protein: a protein flour for rotis and chapatis. We start with whole wheat flour and add soy protein isolate and wheat gluten, wheat's own protein, so the dough still kneads, rolls and puffs like the roti you grew up with. Same tawa, same dinner; expect to adjust the water a little, because the added protein absorbs it differently from plain whole wheat. The flour is milled to order in small batches from our licensed kitchen in Austin, Texas.
It's made for rotis, chapatis, wraps and parathas. Two friends who grew up on rotis built it after getting tired of hearing that roti doesn't fit a protein goal.
Who it's for
- Families who eat roti most nights and want more protein in the meal they already make.
- Anyone tracking protein who would rather eat dinner than drink a shake.
- Cooks who won't give up the puff, the softness or the tawa.
Not for anyone avoiding wheat, gluten or soy. See allergens below.
Ingredients & allergens
Ingredients: whole wheat flour, soy protein isolate, wheat gluten, salt.
Contains: wheat, soy. May contain: milk, sesame.
Made in a facility that also handles milk and sesame. This is not a gluten-free product: wheat gluten is one of the three key ingredients.
How to use it
- Use it the way you use your regular atta: knead with water, rest the dough, roll, and cook on a hot tawa. Expect to adjust the water slightly, because soy protein isolate and wheat gluten absorb water differently from plain whole wheat flour; add it gradually until the dough feels the way you like it. A measured, kitchen-tested recipe with amounts and troubleshooting is coming; until then, go by feel.
- Measure protein by the flour you use. A ¼ cup (34g) serving is roughly one roti and carries about 14g of protein; bigger rotis carry more, smaller ones less.
- Store the bag sealed, cool and dry, and go by the best-by date printed on it. It's a dry flour blend, so it ships shelf-stable at room temperature.

Per 100g of flour that's up to 40g of protein. Nutrition is from our Nutrition Facts label; protein per roti varies with serving size & recipe. Servings per bag: about 10 / 30 / 50 rotis if you roll them family-size (about 45g of flour each); by the label's ¼-cup (34g) serving that's about 13 / 40 / 67 servings per bag.
"3×" compares 14g of protein with the ~4.5g of protein in the same 34g serving of regular whole-wheat atta (USDA FoodData Central, "Wheat flour, whole-grain", NDB 20080: 13.2g of protein per 100g, vs. up to 40g of protein per 100g for Atta Boys).
